Behold an awesome grilled cheese sandwich. For me, grilled cheeses are the ultimate comfort food, even in the summer. I tend to believe that if you do not like grilled cheese sandwiches (or cheesy garlic bread) then you must not be human. Or your taste buds are severely malfunctioning. If this is the case, then I feel very sorry for you, because you are missing out on the sandwich pictured above.
I was craving a grilled cheese sandwich the other day, so I made this delicious piece of heaven. I saw a similar sandwich on Pinterest (of course) and realized I had all the ingredients in my fridge--hallelujah! It turned out so great that I made my friends come over so they could share in my grilled cheese induced happiness. They agreed--this sandwich rocks!
Pesto-Avocado Grilled Cheese Sandwich
As seen on Pinterest, makes 1 sandwich
Butter or olive oil
1 clove garlic, minced (optional)
2 slices bread
2 slices mozarella cheese
1-2 tablespoons pesto
1/2 avocado, sliced
Start by heating up your oil or butter in a pan on medium heat. Add the minced garlic and let cook for about a minute, or until the garlic becomes fragrant. Congrats! You've just made garlic butter/oil.
Assemble your sandwich. Spread your pesto on each slice of bread, top with cheese. Add the spinach, avocado, and goat cheese in any fashion you choose.
Put the sandwich in the pan and let both sides evenly brown, about 5 minutes on each side. I generally put a lid on my pan to generate some steam, which will help the cheeses melt quicker.
Hopefully it comes out looking like this! And you will be oh so happy that you ventured into grilled cheese making in the middle of summer.
