Fried Artichoke Salad


A few weeks ago, my friend Mallory (a fellow first year teacher) and myself decided to take a break from all the planning and grading to grab a bite to eat. Of course, I wanted pizza but also wanted to try some place new. Mallory suggested Katie's Pizzeria Cafe in Clayton. I had never been, so I was excited to try something new. 

From the outside the restaurant doesn't look like much, but this place has to be the cutest pizzeria in St. Louis. Besides having an adorable abode, the cuisine is quite excellent as well. The pizza was stellar, but even more stellar, was the salad I ordered on a whim. The fried artichoke salad was hands down the best salad I have ever had at a restaurant. So clearly, I had to try a version of my own! 

Fried Artichoke Salad
Inspired by Katie's Pizzeria Cafe

1 bag spring mix (or 50/50) salad
1 can artichoke hearts
handful pistachios
goat cheese (as much as you please)
Balsamic Vinaigrette dressing 
Olive oil for frying

To pan fry artichokes, first take them out of the container and wash. Add them to pan of hot oil and let them fry (turning on all sides periodically) until edges have browned. 

To assemble your salad, mix some greens and pistachios. Sprinkle with goat cheese and place artichoke hearts where you want them. Drizzle with salad dressing. 


Although this version isn't quite as tasty as the original (I think I will make my own dressing next time), it definitely hit the spot. It's a great way to add a little pizzazz to your salad repertoire.
