I love winter. I love wearing boots, sweaters, and gloves. I love the snow. What I don't love: being cold.
Recently, I have been very cold. The apartment we moved into is an older building with a stone front and little insulation. Thus, I wear wool socks, sweatpants, and long sleeve shirts constantly.
I decided to add a little warmth to my life by making some spicy food. I found this recipe for fiery fish tacos and decided to try it since I've never made fish tacos before. Earlier this month I bought a huge bag of frozen tilapia because it was on sale. Can we say, impulse purchase? I never cook fish, so it wasn't the best purchase despite it being on sale. So if you have any recipes that would work perfectly for some tilapia shoot them my way!
Fiery Tilapia Tacos with Crunchy Corn Salsa (print recipe)

1 cup corn
½ cup diced red onion
½ cup diced red bell pepper
1 cup cilantro, finely chopped
1 lime, zested and juiced
2 tablespoons sour cream
2 tablespoons cayenne pepper
1 tablespoon ground black pepper
2 tablespoons salt
6 (4 ounce) fillets tilapia
2 tablespoons olive oil
12 corn tortillas, warmed
Preheat grill to high heat (I used a grill pan).
In a medium bowl, mix together corn, red onion, red bell pepper, and cilantro. Stir in lime zest and juice.
In a small bowl, combine cayenne pepper, ground black pepper, and salt. Brush each fillet with olive oil, and sprinkle with spices on both sides.
Arrange fillets in grill pan (or on grill plate if using an outdoor grill). Cook for 3 minutes per side.
Assemble tacos and enjoy!
I loved these! They were a perfect meal for a cold day. I will warn you. Do not go overboard with the rub. I doused mine with the cayenne spice mixture and it was almost too spicy. Good thing I am a fan of spicy food! The crunch from the corn salsa coupled with the flakiness of the tilapia was a great mix. I will definitely be making these again. They are easy to prepare and perfect for a family dinner or get together with friends.
